on the gnuplot prompt or in a gnuplot script file issue the commands:
set term postscript eps enhanced 'NimbusSanL-Regu' 12 fontfile '/usr/share/texmf-texlive/fonts/type1/urw/helvetic/uhvr8a.pfb' size 10cm, 5cm
set output 'filename.eps'
Windows
on the wgnuplot prompt or in a gnuplot script file issue the commands:
set terminal postscript eps enhanced "NimbusSanL-Regu" 12 fontfile "uhvr8a.pfb" size 11cm, 6cm
set output 'filename.eps'
BUT: I have had some issues with that on Windows. With MiKTeX this specific fontfile is in ...\Program Files\MiKTeX 2.7\fonts\type1\urw\helvetic\ or similar
